Oatmeal Blueberry Breakfast Cake

3 cups gluten-free rolled oats
½ tsp salt
1 tsp cinnamon
2 tsp baking powder
1 ½ cups frozen blueberries
2 eggs lightly beaten
¼ cup pure maple syrup
¾ cup cottage cheese or ricotta cheese
1 cup vanilla almond milk
2 tsp pure vanilla extract

  • Preheat oven to 375 degrees F
  • In a large bowl, combine oats, salt, cinnamon, and baking powder. Fold in blueberries until lightly coated.
